When it comes to dessert, most fast casual and QSR operators face the same dilemma: customers want something sweet at the end of their meal, but building a dessert program in-house takes time, equipment, labor, and expertise that most operations simply don’t have. The good news? It does not have to be that hard.
A custom dessert program with the right bakery partner can give your brand a signature sweet offering without the operational headaches. At Greyston Bakery, we’ve been partnering with our clients to build custom programs for over 40 years, and our capabilities in R&D and large-scale production make us an ideal partner for fast casual and QSR brands looking to differentiate.
What Is a Custom Dessert Program?
A custom dessert program is a collaborative partnership between a foodservice operator and a bakery, in which the product, format, flavors, and/or packaging are developed specifically to fit that operator’s menu, customer base, and operational needs. Rather than choosing from a catalog and calling it a day, operators work directly with our culinary and R&D team to create something unique and distinctive.
This is different than simply ordering a standard item. It’s a strategic relationship, one where your dessert becomes an extension of your brand identity.
Why Fast Casual and QSR Operators Are Leaning into Customization
The fast casual and QSR segments are more competitive than ever. Operators are investing heavily in menu differentiation, and dessert is increasingly a part of that conversation. A distinctive dessert offering can do a lot of work: it increases average check size, drives repeat visits, and gives customers one more reason to choose you over the restaurant next door.
Adding dessert to your menu is one of the most efficient ways to increase revenue for a fast casual or QSR operator. Two brownies added to a two-person order can generate up to 20% incremental revenue on that check, with virtually no additional labor. A custom program takes that opportunity one step further by giving your dessert a unique and branded identity that complements your menu and can’t be easily replicated by your competitors.
How Our R&D Team Makes It Work
Our culinary team at Greyston Bakery holds degrees from the Culinary Institute of America (CIA) and Cornell University’s food science programs. They bring deep expertise in product ideation, innovation, formulation, and development. Whether you’re looking to create a flavor that complements your menu’s flavor profile, develop a product with specific dietary attributes, or simply put your brand name on a brownie or blondie that meets your quality and cost targets, our team has the experience to make it happen.
Custom programs can be developed from our existing portfolio, or built from scratch. The process begins with understanding your program goals, your customer demographic, your volume needs, and your timeline. From there, our team develops formulations and samples for your review, iterates based on feedback, and moves toward commercialization.
What Customization Can Look Like
Custom dessert programs with Greyston Bakery can take several forms:
Flavor customization. We can develop brownie and blondie flavors that align with your menu’s culinary identity. A brand known for bold, spicy flavors might want a chili-chocolate brownie. A coffee concept might love a mocha brownie with espresso notes. A brand leaning into seasonal LTOs could rotate flavors quarterly to keep customers engaged.
Format customization. Our artisan bakery produces individually-wrapped single-serve brownies and blondies, as well as tray brownies in cut and uncut formats. Depending on your service model, whether dine-in, takeout, delivery, or grab-and-go, we can develop the format that integrates most seamlessly into your operation.
Size customization. We can make full 2.5 oz. brownies and blondies, as well as smaller portion sizes that are both more budget-friendly and less filling for your customers. Many of today’s consumers (including the growing number of people on GLP-1s) are looking for small indulgences to round out their meal.
Dietary customization. We already produce vegan and gluten-free options from our current portfolio. For custom programs, these attributes can be built-in from the formulation stage, allowing you to serve a broader segment of your customer base without maintaining multiple dessert SKUs.
Packaging and branding. Individually-wrapped items offer natural real estate for branding. Custom packaging can reinforce your brand at the point of consumption, whether your customer is eating in or carrying out.
Scale, Consistency, and Reliability
A custom program only works if the product is consistent at scale. That’s where our production capabilities matter. Our 23,000-square-foot commercial bakery in Yonkers, New York, operates two production lines that can run 24 hours a day, producing over 8 million pounds of brownies per year, with additional capacity available. Our team, spanning mixers, bakers, QA technicians, production staff, and R&D, maintain rigorous quality and food safety standards across every run.
All of our products are stored and shipped frozen, with an ambient shelf life of 30 days after thawing, and 90 days if merchandised refrigerated from frozen. For operators managing multi-unit or national programs, supply chain consistency is key.
The Partnership Beyond the Product
Greyston Bakery is a mission-driven bakery. Our Open Hiring policy means we offer jobs to people who face significant barriers to employment, without background checks, without interviews, and without judgment. Every brownie we bake supports this mission.
For fast casual and QSR brands that care about values-aligned sourcing, partnering with Greyston Bakery is a way to add that story to your dessert program. Increasingly, consumers are paying attention to where their food comes from and who made it. A branded partnership with Greyston Bakery gives your operators a genuine, compelling story to share, one that resonates with today’s socially conscious diner.
Our long-standing partnership with Ben & Jerry’s, soon entering its fifth decade, is a proof point, as is the fact Greyston Brownies have been carried nationally by Whole Foods for over 10 years. These relationships began with mission-driven companies aligning great products and shared values. They have endured because we deliver on both, year after year.
